I – INGREDIENTS
2 chicken breasts 2 if large, 4 if small
1 onion 5 slices sliced into 5 mm slices
mushrooms 1 pack (about 10)
marsala wine (white) 120
soy milk 100 cc
chicken soup 100 cc
oregano 1 branch If it’s dry it is 1/2 teaspoon
vegetable margarine 3 tablespoons (of course it’s more delicious with butter)
salt 1/2 teaspoon
flour 2-3 tablespoons
oil 2 tablespoons
II – DIRECTIONS
Chicken is beaten lightly to make the thickness even, then lightly salt and pepper and sprinkle with flour. When using dry oregano, sprinkle with chicken and salt and pepper.
Heat an oiled frying pan over medium heat to add oregano and bake the chicken on each side for 3 minutes.
In the same pan, fry the onions over medium heat. When it becomes clear, add sliced mushrooms and add marsala wine when it becomes soft.
Add the chicken soup, soy milk, margarine, salt, and pepper to the lightly boiled sauce , put the chicken back in, and turn off the heat in about 1 minute.
As a side dish, mashed potatoes and sauteed spinach are very good.
If you don’t have Marsala wine, try adding a little brandy to white wine instead .
If you don’t have oregano, sage or thyme may be fine.
